The macaroon is a small French pastry appreciated throughout the world. It would be of Arab origin but would have been imported in Italy thanks to the maritime boom. At the time, the macaron was only a biscut, not yet with ganache and it was not until 1830 that it was decided to assemble shells of macaroons two by two and garnish with jam, spice or liqueur, then with different flavors of cream or jam. At the Renaissance, these treats were introduced in France by Catherine de Medici, on the occasion of her marriage with the Duke of Orleans, future king of France. Then the macaroon does not take long to leave the capital to invade the regions of France. In the Basque country, the macaroon appeared under the impulse of a great pastry chef who offered it to Louis 14 for his marriage in 1660 with Marie Thérèse. In Paris, and especially at the court of Versailles, the officers of mouth and ancestor of those who founded in 1802 the house of gastronomy served to the kings of the macaroons, from 1682 to Louis 16 and Marie Antoinette.
