Os acidos graxos, mais conhecidos são as gorduras e os óleos (glicerideos), que exercem importantes funções no metabolismo e são fundamentais para a sobrevivencia da maioria dos seres vivos, funcionam como reserva energetica; ao serem oxidadas, geram praticamente o dobro da quantidade de calorias liberadas na oxidação de mesma quantidade de carboidratos, tem papel como isolante termico, principalmente em animais de clima frio.
